Cold Tomato Gazpacho

Cold Tomato Gazpacho – The perfect Summertime drink

Serves: 6 person

Ingredients

4 cups tomato juice;½ cup finely minced onion; 1 garlic clove, minced; 1 medium bell pepper, minced; 1 tsp honey (optional); 1 meidum cucumber, minced after de-seeding; 2 green onions, minced; juice of ½ lime; 2 tabsp vinegar (red wine or ume vinegar); 1 tsp basil (dry); ½ tsp cumin (jeera powder); ¼ cup parsley; 2-3 tabsp olive oil; salt and black pepper to taste; 2 cups freshly diced tomatoes.

Method:

Combine all ingredients (or optional: puree some), chill until cold and then YUM!
