This is a Vegan class. Trains your cooks in dairy, sugar, white flour-free cooking. Extends the basic principles of Shonali’s health approach to the versatility of whole grains, lentils/beans/fish, vegetables to different cuisines, teaches domestic cooks to minimize oils, use the right salts (moderation), include good ferments to aid digestion. Also, includes a fun section on menu planning for you.
Shonali’s kitchen provides you with a range of good fermented products that will strengthen your digestive system and provide beneficial digestive enzymes. Fermented foods are foods that have been through a process of lactofermentation in which natural bacteria feed on the sugar and starch in the food creating lactic acid.
Natural fermentation of foods has also been shown to preserve and add more nutrients and break the food down to a more digestible form. This, along with the bevy of probiotics created during the fermentation process, could explain the link between consumption of fermented foods and improved digestion.
