WHAT I EAT IN A DAY

What I eat in a day?

Mornings – I start with a glass of warm water, ½ lime juice and pinch of cayenne;

Breakfast: Millet with vegetables or black quinoa/millet idlis (which are steamed Indian grain+lentil combination). My breakfast changes with the season – in summer I might just do a vegetable juice for breakfast or a smoothie with coconut yogurt and fruits.

I don’t subscribe to the every 2 hour eating theory, so I dive straight into lunch (main meal for the day)

Lunch – Leafy greens and vegetables with a whole grain, beans/lentils and definitely some fermented food like khimchi or sauerkraut.

Tea snack – I do get peckish at tea-time: so it’s usually a piece of vegan carrot cake/lemon olive or berries with coconut yogurt or sometimes a sprout chaat (Indian spicy mix with veggietables), sweet potato (boiled, cubed with lime)

Dinner is early, I start with soup + miso paste, and graduate to either a cooked vegetable preparation with a soba noodle broth, or a cooked salad (a lot of my dinner recipes come from the Ottolenghi and Moosewood cookbooks).

Post workouts, which are intense: I do a recovery smoothie with almond milk, avocado, vegan protein powder, a bunch of greens, and some coconut yogurt.
